"Here’s a wine we wanted to bottle already last year, but we decided to give another year in barriques – so it was finally bottled in end of August this year, and time did it well. It gave the wine a slimmer fruit, made the reduction go away and added a yeasty character similar to some young sakes.
We really like it! 40% Chardonnay 60% Sauvignon Blanc, all directly pressed together in an old vertically wooden pressoir for 4 days. From the pressoir directly into barriques where it stayed for 2 years. No soutirage, no topping up."
