Careful selection of the grapes, direct pressing of whole bunches for 70% of the mass, whole berry maceration for the remaining part for 5 days. Spontaneous fermentation in steel, uncontrolled temperature.
Ageing from October to the end of April, in steel of the two unified masses at the end of fermentation, bottled unfiltered.
