Character

This crémant is a blend of juices from the 2022 and 2023 harvests, to which juices from 2023 have been added to induce secondary fermentation in the bottle. The nose is slightly brioche-like, evoking stone fruits. The palate is smooth and very fluid, with no sweetness or bitterness: a pleasant wine with fine, delicate bubbles.

Food pairing

This crémant can be served as an aperitif or throughout a meal. It pairs well with oysters, tapas, fish, poultry, and desserts, among other dishes.

The land and the vine

This crémant is a blend of Auxerrois, Chardonnay, and Pinot Gris grapes from the clay-limestone terroirs of Mittelbergheim. The grapes were sorted in the vineyard and harvested at maturity, around 12 degrees of potential alcohol. Certified organic production.

Vinification

After a year of aging in vats, bottling took place at the beginning of the 2023 harvest with the addition of fresh grape juice from the new harvest and a yeast starter for the second fermentation in the bottle. No dosage.

Serving

Serve chilled, at 8-10 degrees.
