Sweet wines

Smooth and gentle

Sweet wines are incredibly rich in their diversity, often linked to ancestral traditions, from region to region. In Sauterne or on the Coteaux du Layon, they are obtained by harvesting grapes affected by botrytis, a noble rot. In the North of Italy, the grapes are passerillés, i.e. left to dry after the harvest to concentrate their sugars and aromas. In the South of France, it is the basin of natural sweet wines, or mutés, and in Catalonia the tradition is that of the "bullit wine" or cooked wine. Round, rich, with honeyed or candied fruit aromas, sweet wines can also keep a touch of freshness and acidity, offering a perfect balance.
