The red wines, made from the maceration of red skinned grapes, destemmed or not, for a few days to a few weeks, are more complex, deeper and rounder. Grape varieties such as Pinot Noir express themselves with notes of red fruit, graphite and undergrowth, while the more aromatic southern grape varieties such as Grenache and Syrah have spicier, blacker and riper fruit notes. Sometimes aged in barrels or casks, red wines gain in tannin and ageing potential, making them wines that can evolve for many years before showing their full potential. However, some red wines can also be fresh, juicy and easy to drink.
